Buttermilk Syrup



I had some leftover buttermilk in my refrigerator after Easter and wanted to find a new way to use it.  After poking around online I settled on buttermilk syrup.  I read a few recipes to get the general idea and then tried it out.

It’s delicious.  And pretty.  And easy.  And it gave me the chance to use my favorite miniature gravy boat.


Most of my family loved it.  Only a couple of them preferred maple syrup over this recipe.


Here’s the recipe:

Buttermilk Syrup 1 stick butter (no substitutes) 1 cup sugar 1 cup buttermilk 2 Tb. corn syrup 1/2 tsp. baking soda 1 tsp. vanilla This is how I made it:

In a large saucepan combine butter, sugar, buttermilk and corn syrup.  Bring to a rolling boil and cook for 5 minutes.  Add baking soda and stir rapidly while letting it boil for another 30-45 seconds.  (This is why you need a larger pan; it will boil over if you’re not careful.)  Remove from heat and add vanilla; stir.  Let cool and use over french toast, waffles or pancakes.  I might add it would probably be really yummy over ice cream as well.

When I was reading different recipes I noticed comments about the syrup separating as it cools, which is why I chose to boil the mixture for 5 minutes before adding the baking soda.  I think it did the trick; mine stayed thick and the consistency was perfect even when cool.  The leftovers are now in our refrigerator and it hasn’t separated at all.

Coconut, Strawberries and Cream



When I made these for our Easter dinner table, my husband wasn’t all that interested in his (no surprise).

He did, however, request a different version which actually tastes really good.  It’s a fun twist on strawberry shortcake, but with a chewy coconut crust on the bottom.  I simply used one of the bird nests and added cream to it, then piled fresh strawberries on top.


To make the crust (or nest):

2 1/4 cups sweetened coconut 1 egg white Mix coconut and egg white together.  Shape into 5 “nests” and place on parchment paper.  Bake at 350 for 16 minutes.  Cool completely, then top with whipped cream and strawberries.

Easter Table



I took some pictures of our Easter table setting and wanted to remember it.


The centerpiece was this ceramic lamb.  I always watch for Easter decor that features lambs as a reminder that Jesus Christ was the Lamb of God, as well as the Good Shepherd.  It’s surprisingly hard to find things that follow this theme, so when I do it’s exciting.


I also used my wooden Easter basket and added a vase of white tulips from my flowerbeds.  The silver goblets with alyssum in them were also pretty.


At each place I put a small card holder.  I chose ten different scriptures from the Old and New Testaments and put one in each holder.  During our meal we went around the table and read them aloud.  It added a nice spirit to our meal.


Remember my favorite vintage china pattern ?  I recently found six pieces of china in a different pattern and color (by a different maker as well).  The overall style and feel is similar, though, so I used both patterns together as salad plates.  I like how the peacock blue and green work together.


On each plate I added a coconut bird nest.  I shared the recipe on this site last week (my sisters and I have started a little project together).  My children loved having something to eat/play with while they waited for the meal to be served.


I love this silly group.  I think this was our best Easter ever.


Life is good.  So very good.
