Triple Layer Bars

Since my family likes chocolate, coconut and peanut butter, these bars are always a hit.


I don’t know that any of them would say that they like those three things together, but somehow these bars are a great blend of the flavors.  Here’s the recipe:

Triple Layer Bars Crust:
1 1/4 cups flour 2/3 cup sugar 1/3 cup baking cocoa 1/4 cup brown sugar, packed 1 tsp. baking powder 1/4 tsp. salt 1/2 cup cold butter 2 eggs First topping:
7 ounces flaked coconut 1 can (14 oz) sweetened condensed milk Second topping:
2 cups chocolate chips 1/2 cup creamy peanut butter First, combine flour, sugar, cocoa, brown sugar, baking powder and salt in a mixing bowl.  Cut in cold butter until mixture is crumbly.


Add eggs and mix well.


Spread into a greased 9 x 13 inch baking pan.


Bake at 350 for 8 minutes.  Remove from oven.


Sprinkle coconut over the crust.


Drizzle sweetened condensed milk over the coconut.




Return to oven and bake for 20 to 25 minutes or until lightly browned.


In a saucepan, melt chocolate chips and peanut butter.


Stir until smooth and spread over bars.


Let cool on a wire rack.  Cut and serve.

Good Water

Shared by a friend many years ago, this is the “punch” I serve most often.


It’s lemony, but not lemonade.  It’s not just lemon water, either.  With a hint of vanilla, it’s delicious.  I’ve never served it to anyone who didn’t like it.  It’s clear in color so I never have to worry about spills.  It’s easy to make and I try to keep all the ingredients on hand.  The only thing I usually need to add to my shopping list is a couple of lemons.  I’m not kidding when I say that my family LOVES this drink.

That said, here’s the recipe.

Good Water 2 Tb. Citric Acid* 1 Tb. Lemon extract 2 cups sugar 1/2 tsp. vanilla extract 5 quarts water ice lemon slices In a punch bowl or other large container, combine water and sugar.  Add citric acid, lemon extract and vanilla.  Mix together.  Add ice and lemon slices.  Serve and enjoy!  When I am making this for guests, I usually make 1.5 batches.

Note:  Citric Acid is a product that can be purchased in some pharmacies.  However, I have found that I can get it for less money online.  A good  source I’ve found is the San Francisco Herb Company .  Simply search their site for “citric acid” and you’ll find it!  This product stores very well for a long time, so I purchase it by the pound and have it on hand.

Strawberry Shortcake (with a twist)

This dessert has become one that I love to serve when we have guests.   It’s quick and simple but elegant too.


It’s made with pound cake, strawberries, vanilla ice cream, homemade chocolate sauce and whipped cream.


Most of the time I just buy Costco’s package of 3 loaves of poundcake, but you could substitute angel food cake as well.  Next comes  a scoop of ice cream, then fresh strawberries.  A drizzle of chocolate sauce follows the strawberries, and a spoonful of whipped cream on top.

If you cut the strawberries in advance, then it only takes minutes to whip some cream and make a warm chocolate sauce.  It’s a fresh dessert without too much preparation needed.


Someone out there has probably got a fantastic recipe like this, but the first time I made it I was just scrambling to put together a last minute birthday celebration for my sister-in-law.  I happened to have these ingredients on hand and threw them together as an experiment.  It worked, and now my family loves it.

So, next time you’re in a hurry, consider this treat.  It’s delicious!
